Two of Sri Lanka's best-known crops meet in this tin: Ceylon black tea from the Central Highlands and true cinnamon from the southern coast. Both have been grown on the island for generations, and they were made for each other.
We blend whole-leaf black tea with pieces of true cinnamon bark, not with artificial flavouring. As the tea steeps, the cinnamon releases its sweet, floral warmth into the cup, so the drink tastes naturally sweet even without sugar.
The cup is a golden amber, round and gently spiced, with the honeyed character of the tea up front and the soft cinnamon on the finish. Because true cinnamon is mild, it never overpowers the tea the way harsher cassia can.
Brew one teaspoon per cup at about 95 C for four minutes. It is lovely with a splash of milk, a spoon of honey or a slice of orange, and it makes a fine iced tea. Keep the tin sealed, away from moisture and strong smells.
