The classic, made on a Ceylon base
Earl Grey is black tea scented with bergamot, a fragrant citrus fruit grown mainly in southern Italy. The style is nearly two centuries old, and it remains one of the world's best-loved teas. Most Earl Grey is made on a strong, bold base. Ours uses Ceylon tea instead.
Ceylon tea is naturally smooth and malty, which lets the bergamot shine rather than fight for attention. We use natural bergamot flavouring, with nothing artificial, so the citrus oil sits on top of a clean, round black tea.
The aroma is bright and floral-citrus, and the cup is smooth and malty with a soft citrus lift. It is not perfumed or soapy, a common problem when the flavouring is too heavy, and it holds up well to a splash of milk.
Brew one teaspoon per cup at about 95 C for three to four minutes. Serve it plain, with a thin slice of lemon, or as a London Fog with steamed milk and a drop of vanilla. Keep the tin sealed, away from moisture and strong smells.
